  3. Slice carrots diagonally, blanch in salted water for 3 minutes and emmerse in water and ice. Then quickly toss them in a pan with one or two tablespoons of olive oil to make them crispy. Lightly season with salt and keep warm.
  4. Reduce diced green apple and red apple, sprinkling immediately with a bit of lemon juice.
  5. Dilute the tahini with lemon juice and a little water.
