Finger Food Omelet with Fried Green Tomatoes

  • - 2 Panito Probios
  • - 4 Green Tomatoes
  • - 8 eggs
  • - 1/2 Purple Cabbage
  • - 50 grams of Grana
  • - 50 ml of milk
  • Vegan mayonnaise:
  • - 100 ml of Soymilk
  • - 250 ml of sunflower oil
  • - 1 teaspoon mustard
  • - 3 tablespoons lemon juice
  • - salt q.s.
  1. Cut the tomatoes that have been washed before in round of 1 cm hight, fry in a
    pan with extra virgin olive oil until they take color.
  2. Meanwhile, beat with
    a whisk the eggs, add the parmesan and finally the milk without forming a lot of foam.
  3. Pour the mixture into the pan with the tomatoes and simmer the omelet.
  4. Finely slice the
    purple cabbage and cut the panito in half.
  5. Prepare the mayonnaise: Pour into the glass of the blender the soy milk, mustard and salt. Begin blending, after a few minutes pour in the sunflower oil in a fine flush until it starts to thicken. Add the lemon juice, blend for a few seconds and the mayonnaise is ready.
  6. Proceed in the composition of the finger food. Panito at the base, then mayonnaise, purple cabbage and the green tomato omlett, all held together by a toothpick.
