INGREDIENTS
- - 250 g ricotta
- - 3 kiwi
- - 1 golden apple
- - 1 lemon
- - 40 g of brown sugar
- - 1 tablespoon of agave juice
- - 1 tablespoon goji berries
- - 3 bay leaves
- - milk
- - Vin santo
INSTRUCTIONS
- Peel thinly the lemon peel and chop, then squeeze the juice of citrus.
- Peel the kiwi, cut it into small cubes and toss with a little lemon juice and agave syrup
- Wt the goji berries in a small bowl with a dollop of lemon juice
- Peel the apple, slice it and put it in a small saucepan with the sugar and the chopped laurel. Cover with a lid and cook the fruit to medium-low heat for 10-15 minutes until it is soft
- Blend the ricotta with the cooked apple removing the laurel obtaining a smooth paste, if too thick stretch it with a little milk, then possibly season with a drop of Vin Santo.
- Place the cheese and apple cream into bowls or dessert glasses, arrange the diced kiwi, well drained from the lemon juice, and the goji berries. Complete with chopped lemon zest and serve.
