INGREDIENTS
- - 500 g of ice cream with peaches
- - 200 g of rice flour
- - 60 g of brown sugar
- - 50 g of potato starch
- - 50 g of butter
- - 1 egg
- - 1 yellow peach
INSTRUCTIONS
- Gather in a blender the rice flour, the potato flour, the butter, the egg, the brown sugar and work until you get a soft dough (if necessary add a little milk, 2 to 4 tablespoons). Cover the dough with a plastic wrap and place it in refrigerator to rest for 15 minutes.
- Roll out the dough well-dusted with rice flour to a thickness of about half a centimeter. Pierce the surface and with a round mold from 8-10 cm diameter obtaine 12 discs.
- Arrange the biscuits on a baking tray covered with baking paper and bake at 180 ° C for 12-14 minutes. Let them cool completely on a wire rack for cakes.
- Peel and cut into cubes the peach and add to the ice cream let soften for a few minutes out of the freezer. Stuff the pairs of biscuits with a high and compact layer of ice. You can serve immediately or wrap the ice cream in waxed paper and store them in the freezer until ready to consume.
