INGREDIENTS

INSTRUCTIONS
- Peel the pink grapefruit and cut into cubes, removing carefully the bitter peel. Gather the juice released during processing.
- Gather in a bowl the pieces of grapefruit, the lemon juice and the star anise, cover and marinate in the fridge. Unite also a little lemon juice to the grapefruit juice.
- Crush or chop the seeds of anise, then mix them with whole wheat flour and a pinch of salt. Form the traditional fountain and pour in the center the oil and the water necessary to obtain a very soft dough.
- Divide the dough into 4 balls and roll it out as thinly as possible. Arrange on a baking tray lined with baking paper, pierce it with a fork and bake at 190 ° C for about 5 minutes.
- Stir in a saucepan the juice of the yellow and pink grapefruit and the sugar. Cook on low heat for 10 minutes until You reduce the volume to about one third, obtaining a syrup of medium dense.
- Put the marinated cubes on the crispy crackers, sprinkle everything with hot syrup, decorate with star anise and serve.
