Artichokes clafoutis

  • 90 g flour

  • 6 artichokes

  • 4 dl milk

  • 3 eggs

  • 50 g butter

  • 1 lemon

  • parsley

  • salt and pepper

  1. Wash the artichokes and cut the tips with the thorns. Eliminate even the toughest outer leaves leaving only the hearts.

  2. With a sharp knife cut the artichoke in half lengthwise and remove the "beards". Finely slice all the artichokes. As soon as they are cut, soak them in water and lemon so as not to blacken them.

  3. Prepare the dough by placing the 3 whole eggs, the softened butter, the milk, the flour and, finally, a little salt in a large bowl. If you want you can also add a handful of chopped parsley.

  4. Mix the dough well with a wooden spoon, from bottom to top. Add a little ground black pepper and mix again.

  5. Take the chopped artichokes and squeeze them well with your hands or squeeze them in a cloth. Place the artichokes on the bottom of a buttered baking dish, trying to make a single layer. With the help of a spoon, pour the dough over them.

  6. Level everything well, heat the oven and bake at 180°C for 30 minutes. Remove from the oven and let cool before serving.
