Fig Jam with Laurel

INGREDIENTS
  • - 550 g of figs
  • - 200 g of sugar
  • - 1 lemon
  • - 2 bay leaves
INSTRUCTIONS
  1. Peel the figs and gather the pulp into a container, add the sugar, cover and leave to marinate for 12 hours in refrigerator, stirring 2-3 times.
  2. Drip the figs and put on the fire their juice, making it cook for about fifteen minutes.
  3. Squeeze, meanwhile, lemon and peel it, being careful to remove only the yellow peel. Put in a piece of gauze the bay leaves, the seeds of lemon and peeled citrus fruit. Close the whole forming a bundle with kitchen twine.
  4. Unite to the boling syrup, when it begins to caramelize, lemon juice, figs and the bundle. Cook for another 10 minutes. At this point raised the gauze, before squeeze the content. Leave on the heat for 5 minutes.
  5. Pour the jam into sterilized jars and keep the jar upside down until completely cooled.
