  1. The day before wash the apples, dry them, cut them into quarters and, after removing the core, reduce them into cubes. Wash a bunch of basil and dry it shaking. Remove the leaves and chop coarsely. Pour the apple juice over the diced apples and the basil and let them soak for at least 8 hours in the refrigerator.
  2. The next day, drain the apples and the basil and collect the apple juice. Let it reach room temperature. Wash the orange with hot water and dry it. Grate the peel and squeeze the fruit. Wash the second bunch of basil, dry and chop coarsely shaking the leaves.
  3. In a bowl, dissolve the yeast in the warm apple juice. Add flour and salt and mix it all with orange juice. Knead the dough for 8-10 minutes in a robot or by hand. Now just add the pieces of apple, basil, pistachio nuts and orange peel and mix.
  4. Place the dough on floured work surface and let rise for about 20-25 minutes. Meanwhile bend two or three times the dough around itself.
