Savory Plumcake

INGREDIENTS
  • 160 g wheat flour type 0
  • 2 pears
  • 100 g goat cheese
  • 2 eggs
  • 60 g Parmesan
  • 10 thyme sprigs
  • half a sachet of baking powder for savory pies
  • 75 ml milk
  • 75 ml corn oil
  • Salt
  • pepper
INSTRUCTIONS
  1. Turn on the oven at 180° C
  2. Divide the pears with the peel in two for the long, removing the petiole and the central part with the seeds. Cut them into thin slices. Also reduce the goat's cheese into thin slices.
  3. Mix the flour with baking powder, grated Parmesan, a sprinkling of pepper, a pinch of salt and the leaves of thyme sprigs. Separately, beat the eggs with milk and oil, then amalgamate this mixture well with the flour.
  4. Pour the mixture into a 18x12 cm plumcake mold lined with baking paper. Spread the slices of pear and cheese on the surface vertically, alternating them, and making them sink into the mixture so that only a small part remains uncovered.
  5. Bake the plumcake for 25-30 minutes or until cooked in the center (test with a toothpick) and golden on the surface. Remove from the oven and let it cool. If advancing, heat slightly before serving again.
