Tofu Flatbread with Salad of Radishes, Cucumber and Sprouts

  1. Shredded chives finely and then mix it in a bowl with 3 tablespoons of olive oil. Cover and cook in a cool place for at least 30 minutes.
  2. Crush the sesame seeds coarsely in a mortar with a pinch of salt.
  3. Reduce the tofu into cubes and mix it together with pine nuts and chive oil , pouring a little water to get a workable dough with your hands.
  4. Divide the mixture into 12 parts , then knead focaccia forming . Coat gently with the mixture of sesame seeds and place them directly on the plates.
  5. Slice the radishes. Peel the cucumbers, cut them in half lengthwise, empty them completely from the seeds, then cut into slices like radishes.
  6. Mix cucumber, radish and sprouts , add a tablespoon of olive oil, a little lemon juice , a pinch of salt and oregano. Place them on the plate next to focaccia and serve.
