INGREDIENTS
- - 350 g of tofu
- - 8 radishes
- - 2 cucumbers
- - 50 g of shoots alpha alpha
- - 3 tablespoons of sesame seeds
- - 2 tablespoons pine nuts
- - 1 bunch of chives
- - 0.50 lemon
- - Extra-virgin olive oil
- - salt
- - oregano
INSTRUCTIONS
- Shredded chives finely and then mix it in a bowl with 3 tablespoons of olive oil. Cover and cook in a cool place for at least 30 minutes.
- Crush the sesame seeds coarsely in a mortar with a pinch of salt.
- Reduce the tofu into cubes and mix it together with pine nuts and chive oil , pouring a little water to get a workable dough with your hands.
- Divide the mixture into 12 parts , then knead focaccia forming . Coat gently with the mixture of sesame seeds and place them directly on the plates.
- Slice the radishes. Peel the cucumbers, cut them in half lengthwise, empty them completely from the seeds, then cut into slices like radishes.
- Mix cucumber, radish and sprouts , add a tablespoon of olive oil, a little lemon juice , a pinch of salt and oregano. Place them on the plate next to focaccia and serve.
