Chutney of Red Peppers, Pears and Plums

INGREDIENTS
  • - 300 g of red peppers
  • - 300 g of prunes
  • - 1 pear
  • - 4 tablespoons of brown sugar
  • - 4 tablespoons umeboshi
  • - Extra virgin olive oil
  • - pepper
INSTRUCTIONS
  1. Peel the peppers and cut them into cubes. Peel the pear and slice. Finally slice the plums but leave them with the peel.
  2. Gather the 3 ingredients in a saucepan with 3-4 tablespoons of olive oil and a generous grinding of pepper (you do not need salt) and cook for 5 minutes. At this point add the brown sugar and umeboshi, cover with the lid and continue cooking for another 15 minutes; at the end sprinkle with more pepper.
