INGREDIENTS
- For the linguine:
- - 500 g of carrots
- - 1/2 teaspoon salt
- - 7-8 basil leaves
- - 1 and 1/2 cup of cherry tomatoes
- For the sauce:
- - 1 cup cashews
- - 2 bunches arugula
- - 1 clove of garlic
- - 2 teaspoons of lemon juice
- - 2 tablespoons oil
INSTRUCTIONS
- Soak the cashews for a couple of hours.
- Wash the carrots and, with the help of a potato peeler or a mandoline, cut in long strips, about 1/2 cm thin and wide: these are our linguine.
- Mix them with the salt and let stand for a few minutes.
- Meanwhile, prepare the sauce.
- Blend all ingredients in order to obtain a homogeneous and smooth cream.
- Drain the water that will be formed during the rest of the carrots, add the tomatoes, basil, the sauce, stir well and serve.
