Carrot Linguini Pasta with Arugula Sauce - Raw Food

INGREDIENTS
  • For the linguine:
  • - 500 g of carrots
  • - 1/2 teaspoon salt
  • - 7-8 basil leaves
  • - 1 and 1/2 cup of cherry tomatoes
  • For the sauce:
  • - 1 cup cashews
  • - 2 bunches arugula
  • - 1 clove of garlic
  • - 2 teaspoons of lemon juice
  • - 2 tablespoons oil
INSTRUCTIONS
  1. Soak the cashews for a couple of hours.
  2. Wash the carrots and, with the help of a potato peeler or a mandoline, cut in long strips, about 1/2 cm thin and wide: these are our linguine.
  3. Mix them with the salt and let stand for a few minutes.
  4. Meanwhile, prepare the sauce.
  5. Blend all ingredients in order to obtain a homogeneous and smooth cream.
  6. Drain the water that will be formed during the rest of the carrots, add the tomatoes, basil, the sauce, stir well and serve.
