Crispy Salad with Green Beans, Sprouts and Lemon Sauce

  1. Trim the beans and cook in steam for 4-5 minutes, keeping them crisp and firm. Let cool and cut them into small pieces.
  2. Grate a little zest of lemon and then squeeze it. In a small bowl, dissolve a pinch of salt in the lemon juice, zest and add 4 tablespoons of olive oil, then overstir.
  3. Slice the lettuce and combine with the sprouts and green beans in a bowl. Season with the lemon sauce, distribute in 4 bowls and serve.
