INGREDIENTS
- - 600 g of cauliflower
- - 60 g of grated Parmesan cheese
- - 40 g of pine nuts
- - 30 g of pitted dates
- - 30 g of raisins
- - 2 sachets of saffron
- - Extra virgin olive oil
- - salt
INSTRUCTIONS
- Let the raisins soak in a cup of water
- Reduce the cauliflower into florets, then shake it in a blender until you get a look similar to that of couscous. Transfer it to a bowl
- Dissolve the saffron in a tablespoon of water and pour it on the flour of cauliflower. Stir well until the color is distributed evenly. Check the salt
- Toast the pine nuts along with a teaspoon of oil in a frying pan with a thick bottom. Cut the dates into small cubes. Drain and squeeze the raisins.
- Transfer the cauliflower in a large bowl, then add the pine nuts, dates, raisins, the grated Parmesan cheese and 3-4 spoons of oil. Stir the ingredients with care and serve.
