Fake Cauliflower Cous Cous with Saffron, Dates, Raisins and Pine Nuts

INGREDIENTS
  • - 600 g of cauliflower
  • - 60 g of grated Parmesan cheese
  • - 40 g of pine nuts
  • - 30 g of pitted dates
  • - 30 g of raisins
  • - 2 sachets of saffron
  • - Extra virgin olive oil
  • - salt
INSTRUCTIONS
  1. Let the raisins soak in a cup of water
  2. Reduce the cauliflower into florets, then shake it in a blender until you get a look similar to that of couscous. Transfer it to a bowl
  3. Dissolve the saffron in a tablespoon of water and pour it on the flour of cauliflower. Stir well until the color is distributed evenly. Check the salt
  4. Toast the pine nuts along with a teaspoon of oil in a frying pan with a thick bottom. Cut the dates into small cubes. Drain and squeeze the raisins.
  5. Transfer the cauliflower in a large bowl, then add the pine nuts, dates, raisins, the grated Parmesan cheese and 3-4 spoons of oil. Stir the ingredients with care and serve.
