Onion Gratin

INGREDIENTS

  • - 2 eggs
  • - 6 tablespoons grated Parmesan cheese
  • - 4 tablespoons of extra virgin olive oil

INSTRUCTIONS
  1. Peel the onions, wash and cut into 4 pieces
  2. Arrange them close enough, in a rectangular pan, non-stick, lightly oiled
  3. Prepare an emulsion with 2-3 tablespoons of olive oil, 5 tablespoons of water and pour it over the onions
  4. Salt lightly. Bake at 200 ° C for about 45 minutes, until the onions are soft. If they get too brown cover with aluminum foil
  5. In a bowl, beat the eggs with the milk, herbs, 3 tablespoons parmesan cheese and a pinch of salt. Pour the mixture over the onions. Sprinkle with remaining Parmesan cheese and bake at 200 ° C for a further 30-35 minutes. Let stand 15 minutes before serving.
