INGREDIENTS
- - 4 potatoes
- - 120 g of walnuts
- - 1 red onion
- - 1 lemon
- - 1 tablespoon brown sugar
- - 2 tablespoons extra virgin olive oil
- - 1 tablespoon of apple cider vinegar
- - Salt
INSTRUCTIONS
- Divide the onion first into quarters and then slice them, finally you put these in a container. Mix the brown sugar with apple cider vinegar and a tablespoon of oil, then pour on the onion, stir, cover and let marinate in the refrigerator for one to two hours.
- Blend the nuts with the lemon juice, the remaining oil, 75 ml of water and a bit of salt. You will get a thick sauce similar to mayonnaise.
- Peel the potatoes and cut into cubes about an inch on each side, then immerse them in a pot with cold salted water and let them boil for 5-6 minutes or until they become tender. Be careful: they do not have to discard.
- Spread the still warm potato cubes into 4 bowls together with the onion slices with their marinade, season with walnut cream and serve.
