Potato Salad with Red Onions and Walnut Cream

  1. Divide the onion first into quarters and then slice them, finally you put these in a container. Mix the brown sugar with apple cider vinegar and a tablespoon of oil, then pour on the onion, stir, cover and let marinate in the refrigerator for one to two hours.
  2. Blend the nuts with the lemon juice, the remaining oil, 75 ml of water and a bit of salt. You will get a thick sauce similar to mayonnaise.
  3. Peel the potatoes and cut into cubes about an inch on each side, then immerse them in a pot with cold salted water and let them boil for 5-6 minutes or until they become tender. Be careful: they do not have to discard.
  4. Spread the still warm potato cubes into 4 bowls together with the onion slices with their marinade, season with walnut cream and serve.
