Tomatoes with Onions and Sicilian Cheese

INGREDIENTS
  • - 400 g of bread
  • - 4 tomatoes
  • - 100 g of baked cottage cheese
  • - 1 red onion
  • - 1 lemon
  • - Red wine vinegar
  • - 4 tablespoons of extra virgin olive oil
  • - salt
  • - oregano
INSTRUCTIONS
  1. Cut the tomatoes into thin slices widthwise, salt and set aside.
  2. Cut the bread into slices of thickness and dimensions similar to those of the tomatoes. Sprinkle with a little salt and put to roast in the oven at 200 ° C for a few minutes.
  3. Chop very fine the onion, then mix it in a bowl with the chopped olives, peeled lemon and cutted to pieces, olive oil, vinegar and a pinch of oregano and salt.
  4. Put the pastry directly into the dishes alternating slices of tomato, onion sauce and slices of toasted bread. Finish by sprinkling all over crumbled baked ricotta cheese.
