Small Flan with Prunes and Cottage Cheese

INGREDIENTS
  • - 8 plums
  • - 250 ml of milk
  • - 120 g of cottage cheese
  • - 50 g sugar
  • - 40 g white chocolate
  • - 2 cloves
  • - 3 sheets of gelatin cake
INSTRUCTIONS
  1. Open the plums in half, but without separating them by holding them together with the skin. In a steel pot add the sugar, cloves and about 80 ml of water. Cook the syrup for 5 minutes, then remove the cloves and add the plums; reduce heat and simmer for 3-4 minutes.
  2. Drain the syrup from the fruit, possibly helping with a slotted spoon. Let it cool completely. Take 12 halfs and whisk together with the ricotta until YOu get a smooth cream.
  3. Soak the gelatin in a little cold water. Heat the milk without bringing to a boil, add the drained gelatine, stirring constantly until it melts completely. Switch off.
  4. Add the smoothie fruit and cottage cheese, stir and pour the mixture into 4 dessert molds. Store in a refrigerator for about 2 hours.
  5. Inverse the flans, cover with the half plums, pour on the remained syrup and decorated with white chocolate chips. You can also use other seasonal fruits such as purple plums, pears, figs, blackberries or berries. White chocolate can become dark.
