INGREDIENTS
- - 750 grams of broccoli
- - 200 g of pearl barley
- - 1 onion
- - 1 teaspoon of chopped parsley
- - 1 teaspoon grated lemon rind
- - 50 g of walnuts
- - 1 teaspoon dried marjoram
- - Extra virgin olive oil
- - salt
INSTRUCTIONS
- Peel the broccoli, cut them into florets, wash and boil them for 15 minutes in boiling salted water.
- Drain with a slotted spoon. In their cooking water, put the barley and boil in a covered pot for 40-45 minutes from the moment it starts to boil.
- Peel the onion and coarsely chopped walnuts.
- Saute, just before the barley is cooked, the onion with the marjoram and four tablespoons of olive oil for 10-12 minutes.
- Add the drained barley and, after having cooked for a few minutes, add the crushed broccoli.
- Mix, complete with parsley, lemon peel and nuts, and salt to taste.
