Barley with Broccoli in the Pan

  1. Peel the broccoli, cut them into florets, wash and boil them for 15 minutes in boiling salted water.
  2. Drain with a slotted spoon. In their cooking water, put the barley and boil in a covered pot for 40-45 minutes from the moment it starts to boil.
  3. Peel the onion and coarsely chopped walnuts.
  4. Saute, just before the barley is cooked, the onion with the marjoram and four tablespoons of olive oil for 10-12 minutes.
  5. Add the drained barley and, after having cooked for a few minutes, add the crushed broccoli.
  6. Mix, complete with parsley, lemon peel and nuts, and salt to taste.
