INGREDIENTS
- - 250 gr of corn couscous gluten VivaMais
- - 1 lemon
- - 2 zucchini
- - 1 red onion
- - A dozen cherry tomatoes
- - 1 yellow pepper
- - 1 clove of garlic
- - 1 tablespoon fresh herbs (basil, mint, parsley, coriander)
- - 2 tablespoons arugula pesto Il Nutrimento
- - Salt and pepper
- - The oil EVO Il Nutrimento
INSTRUCTIONS
- Finely chop the herbs and place them in a bowl with a clove of garlic, salt and pepper. cover with oil and let stand for 15 minutes.
- Cut the courgettes, tomatoes in half, slice the pepper and onion. Skip all the vegetables in a pan with extra virgin olive oil over high heat. Turn off and let it cool.
- Prepare the couscous as indicated on the package and add 5 tablespoons of olive oil and 2 tablespoons of lemon juice, crumble completely.
- Pour into a bowl and drizzle with the marinade in advance removing the garlic. Add 2 tablespoons of pesto and mix.
- Assemble the dish of vegetables and cous cous, let it rest for a few minutes and serve.
