Couscous of Grilled Vegetables - Healthy Recipes 2013

  1. Finely chop the herbs and place them in a bowl with a clove of garlic, salt and pepper. cover with oil and let stand for 15 minutes.
  2. Cut the courgettes, tomatoes in half, slice the pepper and onion. Skip all the vegetables in a pan with extra virgin olive oil over high heat. Turn off and let it cool.
  3. Prepare the couscous as indicated on the package and add 5 tablespoons of olive oil and 2 tablespoons of lemon juice, crumble completely.
  4. Pour into a bowl and drizzle with the marinade in advance removing the garlic. Add 2 tablespoons of pesto and mix.
  5. Assemble the dish of vegetables and cous cous, let it rest for a few minutes and serve.
