INGREDIENTS
- - 200 g of couscous
- - 150 g of fresh tofu
- - 1 head of broccoli
- - 100 g of fresh shelled peas
- - 2 tablespoons extra virgin olive oil
- - a spoonful of mint
- - salt and pepper
INSTRUCTIONS
- Put the couscous in a bowl and pour 2 dl of boiling water. Cover and let stand for 3 minutes.
- Cook the peas for 2 minutes in salted water.
- Clean the broccoli and cut into thin slices. Crumble the tofu.
- Add the broccoli and peas to the couscous and add also the mint also washed, buffered with a paper towel and cut into strips.
- Add the tofu, olive oil and season with salt and pepper.
