Couscous with Broad Beans

  1. Put the couscous in a bowl with oil and stir with a fork, taking care to mix the oil well.
  2. Bring to a boil salt water where you pour the couscous when it is boiling, turn off, cover and let stand for 2 minutes. Add the butter, stir well and resume cooking over low heat for 3 minutes, stirring constantly. Turn off and let stand for 8 minutes in a covered pot.
  3. Shell the beans and cook in salted water until they become tender. Once cooked, mash them and add them to the couscous. Stir and season with olive oil and black pepper, adjusting it according to your tastes.
