Focaccia with Beans Hamburger, Onion of Montoro and Pumpkin - Panito

  1. Preparation of the bean hamburgers:

    Mash the cooked beans and place them in a bowl. Add two egg yolks (reserving the whites that we will use later), 40 g of buckwheat flour, 40 g of Parmesan cheese, half a clove of minced garlic, salt and parsley. Mix well until the dough is easy to work with your hands. Let the dough rest in the fridge for half an hour, making sure to cover the bowl with a plastic wrap.

    In a separate bowl combine the two egg whites You’d set aside and a whole egg, add salt and mix together. After spending half an hour in the fridge, take the dough and form the burgers on the size and shape you want. Switch burgers in the egg and then in bread crumbs. Fry the burgers in hot oil or bake in the oven for 15 minutes at 200 degrees on lightly greased baking sheet, making sure to turn the burgers over halfway through cooking.
  2. Preparation of the breaded onions:

    Cut the onion into slices so you get many rings. Pass the onion rings first into an egg, previously salted and mixed, and then in a dish where You’ve mixed a tablespoon of buckwheat flour and a tablespoon of rice flour. Fry the onion rings in hot oil and then dry with paper towels.
  3. Preparation of the grilled pumpkin (prepared one day before):

    Remove the skin from the pumpkin and cut into thin slices. Grill the slices of pumpkin and allow to cool to room temperature. Place the grilled slices in a bowl and season with salt, garlic, hot pepper and a few drops of balsamic vinegar, covering the whole thing with olive oil. Let marinate for 24 hours.
  4. Composition of the cake:
    Heat the focaccia in the oven at 200 ° for 5 minutes.
    Then, after it cooled down for a few minutes, open the cake in two and place the onion rings on the bottom. Place the bean burgers on the onions and top it with the slices of grilled pumpkin.
