Pumpkin Flan

  • -500 g pumpkin
  • -2 eggs
  • -½ onion
  • -50 g of grated pecorino cheese
  • -60 g of shelled walnuts
  • -oil
  • -salt
  1. Cut the onion into thin strips and the pumpkin into small pieces.
  2. Heat a little olive oil in a frying pan, add first the onion and brown it briefly, then the pumpkin.
  3. Add salt and cook over low heat for 15 minutes, until the pumpkin will be undone.
  4. Whisk the mixture and let it cool.
    Add the lightly beaten eggs, grated cheese and chopped walnuts.
    Mix well.
  5. Grease the casserole with a little oil and pour in the mixture.
    Lay them in a baking dish containing two fingers of water and cook in the oven in a water bath at 140-150 ° for 40-50 minutes. Serve hot.
