INGREDIENTS
- - 500 g of potatoes
- - 320 g basmati rice
- - 100 g of arugula
- - 100 g of walnuts
- - 4 tablespoons of extra virgin olive oil
- - salt
- - pepper
INSTRUCTIONS
- Boil the potatoes and mash them with a fork (kept the cooking water). Cook the rice.
- Thoroughly clean and dry the arugula. Chop finely with the help of a food processor and mix with chopped walnuts, in an electric grinder (add a pinch of salt to facilitate the operation). Finally add a few tablespoons of the cooking water of potatoes to bring the sauce to the right consistency.
- Add the olive oil and season with salt. Season with freshly ground pepper only if the arugula is not very spicy. When the rice is ready season with the sauce.
