  1. Boil the potatoes and mash them with a fork (kept the cooking water). Cook the rice.
  2. Thoroughly clean and dry the arugula. Chop finely with the help of a food processor and mix with chopped walnuts, in an electric grinder (add a pinch of salt to facilitate the operation). Finally add a few tablespoons of the cooking water of potatoes to bring the sauce to the right consistency.
  3. Add the olive oil and season with salt. Season with freshly ground pepper only if the arugula is not very spicy. When the rice is ready season with the sauce.
