INGREDIENTS
- - 250 g of pearl barley
- - 2 heads of radicchio
- - 100 g of Taleggio cheese
- - 2 cloves of garlic
- - 1 teaspoon chopped parsley
- - 1 teaspoon dried marjoram
- - Extra virgin olive oil
- - salt
INSTRUCTIONS
- Rinse the barley and boil it in lightly salted water for about forty minutes on low to medium-low heat.
- Saute just before the barley is cooked, chopped garlic along with the marjoram and 3 tablespoons of oil in a frying pan for 2-3 minutes on medium-low heat, then add the radicchio finely sliced, salted and go again for 5 minutes
- Pour the barley well drained into the pan, let it briefly flavor, add the parsley and cheese cubes, check for salt and remove from heat after one to two minutes
