- Prepare the vegetable soup in a pot by placing a liter of water with the celery, onion, parsley and let it boil for half an hour.
- in the meanwhile shell the beans, wash and drain well. In a saucepan, preferably earthenware, pour 4 tablespoons of olive oil, add the onions and finely chopped garlic and let it fry over moderate heat, stirring with a wooden spoon, making sure that they dressings do not burn. After a while, add the beans, let them cook for a few minutes then add a dozen chopped mint leaves, stir well, check for salt and mix again.
- Stir in the pasta at this point and immediately pour a ladle of hot soup; continue cooking for about 8 minutes (follow the time indicated on the package of the pasta) by adding a ladle of broth at a time until you get a not too runny soup.
- Spread the pasta supplementing it with a little olive oil and garnish dishes with mint leaves. Serve immediately.
