INSTRUCTIONS
- Cover the potatoes with cold water in a saucepan and boil for 20-25 minutes until they are tender but not unmade. Boil also the beans for 10 minutes, drain and peel them once cold.
- Peel the potatoes until they are still hot and mash them making them fall on a pastry board, add a pinch of salt and flour, then knead the ingredients quickly and with a teaspoon form many small round nuts.
- Press the dumplings in the center forming a cavity and placed in each one bean. Close them and give them a round shape rolling them with the palm of the hand. Lightly coat with flour and put them on a tray.
- Chop the garlic and sauté it in a pan with 2-3 tablespoons of olive oil, add the tomatoes cutted in thin slices, salt and saute over high heat for 5 minutes, finally add the remainig beans that you have already chopped toghether with the marjoram.
- Boil the dumplings for a few minutes, remove them with a slotted spoon and put them directly on the dishes, dress with tomatoes, a little olive oil and serve.
