INGREDIENTS
- - 1 bunch of asparagus
- - 2 handfuls of spinach
- - 1 lt. of vegetable broth
- - 1 cup hulled barley cooked
- - 1 tablespoon minced ginger
- - 1 clove of garlic
- - 1 tablespoon of soy sauce
- - 2 teaspoons of miso
- - 2 tablespoons of olive oil
INSTRUCTIONS
- Clean the asparagus and cut into thin slices, in a pot or wok put the oil with ginger and garlic and saute for 1 min., Add the asparagus and cook for 2 minutes, add the chopped spinach and broth and boil for 7-8 min. Pour the barley and continue cooking for 2 min. stirring well.
- Remove from heat and season with soy sauce and miso dissolved in a little hot broth and serve the hot soup as the opening of the meal.
