Penne with Cream of Zucchini and Tomatoes

INGREDIENTS
  • - 320 g of whoe wheat penne
  • - - 15 cherry tomatoes
  • - 3 zucchini
  • - 1 onion
  • - 6 basil leaves
  • - 1 tablespoon flaked almonds
  • - Oil
  • - salt
INSTRUCTIONS
  1. Peel the zucchini with a potato peeler and cut the peels into 3 parts. Then boil the peeled zucchini in a little boiling water without salt. Blend it once cooked.
  2. Thinly slice the onion and put it to fry in a pan with 2 tablespoons, add the zucchini peel, the tomatoes you divided into 4 slices, basil leaves and a pinch of salt. If necessary, add while cooking a little of the zucchini cooking water.
  3. Cook the penne in plenty of boiling salted water. Drain them al dente and sauté for a minute in the pan with the vegetables. At the end add the zucchini puree, mix well and serve immediately. Garnish the dish with almond chips and other basil leaves.
