INGREDIENTS
- - ½ Purple Cabbage
- - 2 Potatoes
- - 1 Onion
- - 1 Red Apple
- - 80g Yogurt or 4 tablespoon Soya Vegetal Cuisine
- - Extra Virgin Olive oil
- - Salt
- - 450ml Vegetable Stock
INSTRUCTIONS
- In a wide pan, heat 2 tablespoons oil, sauté the onion, add the finely chopped potatoes, salt to taste and sauté until golden.
- Stir with a wooden spoon, then add the clean, peeled and chopped cabbage and apple.
- Sauté a little bit more, then add the vegetable stock.
- Bring to boil and cook for 30 minutes on a medium heat.
- Afterwards, blend the vegetables with an immersion blender adding the yogurt and process until it’s creamy.
