INGREDIENTS
- -280g ancient grains spaghetti
- -3 slices bread
- -3 sundried tomatoes
- -2 tablespoons pine nuts
- -1 clove of garlic
- - 1 chili pepper
- -1 sprig mixed herbs
- -extra virgin olive oil
- -salt
INSTRUCTIONS
- Remove the crust from the bread and process the soft part with the drained sundried tomatoes. Season with 2-3 tablespoons oil, a pinch of salt and place it in a wide pan, stirring continuously to toast the bread.
- Boil the spaghetti with salted water
- In the meantime, peel and mince the herbs with a clove of garlic and some chilli pepper (a few of a whole one, according to your preference). Place the mixture in a bowl, add 3 tablespoons oil and let it season
- Drain the pasta with some of its water in the bowl, stir well and serve with some toasted bread crumbs and pine nuts on top.
