Cold Balls with Almonds and Beans

INGREDIENTS
INSTRUCTIONS
  1. Pass the beans in the food mill to remove the skins.
  2. Mix in a bowl the cream of beans, freshly made ricotta and chopped parsley. Season with a couple of tablespoons of olive oil, then check for salt and sprinkle with pepper.
  3. Reduce the dough into little balls and coat thoroughly in chopped almonds. At this point arrange them in the refrigerator and serve after at least 4 hours.
