INGREDIENTS
- - 400 g of beans -borlotti fresh, cooked
- - 200 g of cottage cheese
- - 100 g of chopped almonds
- - 50 g of grated Parmesan cheese
- - parsley
- - Extra virgin olive oil
- - salt
- - pepper
INSTRUCTIONS
- Pass the beans in the food mill to remove the skins.
- Mix in a bowl the cream of beans, freshly made ricotta and chopped parsley. Season with a couple of tablespoons of olive oil, then check for salt and sprinkle with pepper.
- Reduce the dough into little balls and coat thoroughly in chopped almonds. At this point arrange them in the refrigerator and serve after at least 4 hours.
