INGREDIENTS
- - 500 g of green cauliflower
- - 180 g of raw rice
- - 100 g of cheese
- - 20 g of dried mushrooms
- - 3 bay leaves
- - 3 tablespoons of breadcrumbs
- - 2 grated Parmesan cheese
- - 1 chopped parsley
- - salt
INSTRUCTIONS
- Rinse well the rice and pour IT into a saucepan on which it is possible to place a basket for steaming. Add half a liter of water and bring to a boil.
- Divide the cauliflower into florets and place it in the basket. Lower the heat, add the rice, bay leaves then put the basket on the pot, cover and cook the florets until they are tender; the rice will absorb all the cooking liquid.
- Spread the rice without the bay leaf on a tray and let it cool, then stir in the cauliflower previously crushed with a fork, mushrooms, soaked and chopped parsley and the cheese cubes. Mix all ingredients well.
- Form with your well oiled hands small croquettes, roll in breadcrumbs mixed with parmesan and place them on a baking sheet covered with parchment paper. Shortly before serving, bake the croquettes au gratin in the oven at 200 ° C for 15 minutes.
