Pizza with Salad, Taleggio Cheese, Almonds and Black Olives

INGREDIENTS
  • - 500 g of dough for pizza
  • - 200 g of Taleggio
  • - 2 tablespoons grated Parmesan cheese
  • - 1 head of lettuce
  • - 2 tablespoons flaked almonds
  • - 10 black olives
  • - 1 shallot
  • - 1 tablespoon dried thyme
  • - Oil
  • - Salt
  • - Pepper
INSTRUCTIONS
  1. Preheat the oven to 230-240 ° C.
  2. Remove the most leathery leaves of the lettuce and cut the rest into not too thin strips. Finely chop the shallots and let them brown in a pan with 2 tablespoons of olive oil, adding a little water to not get them too brown. Add the lettuce, salt, pepper and sauté, stirring often until the vegetation water is completely evaporated.
  3. Roll out the dough on a floured surface and place it in a baking pan for pizza after having brushed the bottom with a little oil. Wrap it completely with the braised lettuce and then sprinkle the Taleggio reduced to cubes and olives into rounds. Season with freshly ground pepper and a little olive oil, thyme and parmesan.
  4. Bake the pizza for about 20 minutes, leaving brown well.
  5. Toast, meanwhile, the almonds in a pan with a thick bottom and without seasonings until they are crispy. Take out the pizza, spread the almonds on it, cut into slices and serve hot.
