Canapes with Avocado Cream and Sundried Tomatoes

  1. To prepare the sandwiches with avocado cream and sundried tomatoes start with the preparation of the avocado cream: Cut the avocado in half, remove the pit and peel and cut into pieces. Then put in a blender or in a mixer; add the cream cheese cutted into cubes, salt and a pinch of pepper. Blend for a few minutes, until the mixture is smooth.
  2. Cut the bread into slices and toast for a few minutes in the oven or toaster; therefore, if you will, with a preferred form of a biscuit cutter get the sandwiches, slice or cut in half to form two triangles. Then switch to the composition of your sandwiches: for a more decorative aspect you can use a pastry bag with a star nozzle, getting an effect even more precise. Alternatively, spread the avocado cream on the slice of bread.
  3. Cut the tomatoes in half and dry them with a paper towel to remove the excessive oil. Then place each half on the avocado cream.
  4. Serve the sandwiches with avocado cream and sundried tomatoes immediatly, as an appetizer or finger food with an aperitif.
