Parmesan Cheese Puffs

  1. Boil 250ml water with the chopped butter or Spalmolio and a pinch of salt. Reduce the heat to the minimum, add the flour and stir for 2-3 more minutes on the stove. Then let it cool down.
  2. Add the eggs to the batter, stirring to incorporate every ingredient and obtain a creamy dough. Season it with the parmesan cheese and the nutmeg. Place the batter in a pastry bag, then squeeze it on an oiled baking tray, to obtain small and well separated balls.
  3. Bake the puffs at 190°C for 10-12 minutes, never opening the oven. Once they cool down, keep them in a paper bag to preserve their freshness.
