Spicy Egg Boats

INGREDIENTS
  • - 6 eggs
  • - 1 shallot
  • - Celery
  • - 4 tablespoons chopped fresh tarragon
  • - 2 tablespoons extra virgin olive oil
  • - 2 tablespoons mustard
  • - 1 tablespoon capers
  • - 3 teaspoons of mayonnaise
  • - 1 teaspoon paprika
INSTRUCTIONS
  1. Cut lengthwise 6 hard-boiled eggs. Crumble all the yolks together. Add: 1 shallot and 1 celery stalk, chopped 4 tablespoons chopped tarragon or marjoram, 2 of olive oil and 2 mustard, 1 chopped capers, 3 teaspoons of mayonnaise and 1 of paprika. Fill the egg halves with this smooth cream.
