Tomatoes Stuffed with Vegan Russian Salad

  1. Peel and thinly chop the potato and the carrot, steam them and let them cool down.
  2. In a bowl, combine the Mayorice Original with the veggies and some minced basil, then let it sit in the fridge.
  3. Divide the tomatoes in two, carve the seeds, season them with oil and salt and stuff them with one tablespoon of Russian salad, then serve.
