Whole Wheat Club Sandwich with Eggs and Avocado Hummus

  1. Boil the eggs for 10 minutes. Then peel them and slice them
  2. In an immersion blender, combine the chickpeas, the avocado pulp, the lemon juice, the tahini sauce, a sprinkle of salt and pepper. Blend to obtain a cream and add a few drops of water if needed.
  3. Slightly toast the slices of bread. Let them cool down and spread the hummus on one side, then layer the eggs, some salt and pepper and a handful of marjoram leaves. Cover the slice with another slice of bread and spread the surface with more hummus. Do the same with the egg and the marjoram. Spread some hummus on one side of the third slice of bread and place it on the eggs to close the sandwich. Prepare the second sandwich in the same way, then divide both of them in half cutting them diagonally, keep them close with some skewers and serve.
