INGREDIENTS
- - 3 bananas
- - 130 g of whole wheat flour
- - 120 g of white flour
- - 120 g of rice syrup
- - 100 g of walnuts
- - 100 g of plain yogurt
- - 1 egg
- - 50 g of cornstarch
- - 60 ml of peanut oil
- - 1 teaspoon baking powder
- - 40 g of white chocolate
INSTRUCTIONS
- Preheat the oven to 180 ° C.
- Beat the egg with the electric whisk together with the rice syrup, add the yogurt, the well-crushed oil and pulp of the bananas.
- Mix in a bowl the wholemeal flour with the white flour, the cornstarch and baking powder, then mix it all with the bananas and work until you get a smooth consistency. At last mix in the coarsely chopped walnuts.
- Line a loaf pan with parchment paper and pour in the mixture, leveling the surface. Bake for 30 minutes, however, check the cooking by inserting a toothpick that will have to be a bit moist but not sticky. Baked the cake, after a few minutes remove it from the mold and let it cool completely. Decorate it, if necessary, with some stars of sugar.
- Melt the white chocolate in a double boiler and let cool until it reaches a litle thicker consistency. Then with a teaspoon flush it on the surface of the cake with a rapid zigzag motion.
