- Grate half a teaspoon of lemon zest and squeeze the juice. Peel the medlars and cut into thin slices, sprinkling immediately with citrus juice.
- Cut the strawberries into pieces and whisk them quickly to obtain a cream, then add the grated peel and the chopped mint leaves. Season the medlars with this mixture, cover and store in a cool place.
- Bring to a boil in a saucepan 200 ml of water, then boil the peas slowly for 10 minutes. Drain the peas with a slotted spoon and arrange them in a bowl. Add the sugar and vanilla in the still boiling water, lower the heat and cook for another 5-10 minutes, reducing the original volume to one third. In the end, strain the syrup from the vanilla.
- Whisk the syrup along with the peas, pouring the milk that You need to get a green cream. Distribute the medlars in 4 cups, cover with cream, decorate with almond flakes and serve.
