Dessert of Medlar and Strawberries with Peas Cream

INGREDIENTS
  • - 12 medlar
  • - 6 strawberries
  • - 50 g peas
  • - 2 tablespoons sugar
  • - 15 g of flaked almonds
  • - 0.50 lemon
  • - 8 mint leaves
  • - ¼vanilla bean
  • Soy milk
INSTRUCTIONS
  1. Grate half a teaspoon of lemon zest and squeeze the juice. Peel the medlars and cut into thin slices, sprinkling immediately with citrus juice.
  2. Cut the strawberries into pieces and whisk them quickly to obtain a cream, then add the grated peel and the chopped mint leaves. Season the medlars with this mixture, cover and store in a cool place.
  3. Bring to a boil in a saucepan 200 ml of water, then boil the peas slowly for 10 minutes. Drain the peas with a slotted spoon and arrange them in a bowl. Add the sugar and vanilla in the still boiling water, lower the heat and cook for another 5-10 minutes, reducing the original volume to one third. In the end, strain the syrup from the vanilla.
  4. Whisk the syrup along with the peas, pouring the milk that You need to get a green cream. Distribute the medlars in 4 cups, cover with cream, decorate with almond flakes and serve.
