INGREDIENTS
- -2 bananas
- -120g cornstarch
- -100g coconut flour
- -100g almond flour
- -150g maple syrup
- -20g chia seeds
- -1 teaspoon vanilla powder
- - ½ packet baking powder
- -100g coconut milk
- -salt
- -powdered sugar
INSTRUCTIONS
- Cover the chia seeds with about 60ml water and let them soak for at least 15 minutes to create a gelatin that resembles the egg whites. If needed, add more water.
- Combine the corn starch, the almond flour, the coconut flour, a pinch of salt, the vanilla and the baking powder. Now, add the maple syrup, the coconut milk, the soaked chia seeds and the mashed bananas. Stir carefully to obtain a consistent batter.
- Pour the batter in a 24-26 cm springform pan covered with parchment paper, then bake at 180°C for 35 minutes.
- Let the cake cool down completely, then sprinkle it with the powdered sugar.
