Icicles with Cucumber, Ginger and Mint

INGREDIENTS
  • For 6 icicles:
  • -1 cucumber
  • -2 lemons
  • - 80ml Probios’ agave syrup
  • - 50g grated ginger
  • - 4 mint sprigs
  • To decorate:
  • - half a cucumber
  • - mint leaves
INSTRUCTIONS
  1. Peel the cucumber and mince it. Squeeze the lemons to obtain 80ml juice.
  2. Process the peeled ginger, the cucumber and the mint to obtain a thin liquid (if needed, add some water)
  3. Sift the mixture through a colander to separate the juice. If needed, sift it twice to remove the whole pulp.
  4. In a small jar, combine the cucumber juice, the lemon juice, the agave syrup and mince until the syrup is completely dissolved. At this point, add 500ml water and pour the liquid into the icicle moulds.
  5. Thinly slice the cucumber to decorate and keep the peel on. Add some slices inside the moulds, together with a few mint leaves. Complete with the sticks, cover them and freeze them for at least 8 hours before serving.
