INGREDIENTS

- - 1 teaspoon cream of tartar

INSTRUCTIONS
- Peel and grate the ginger. Also grated lemon rind.
- Combine in a bowl zest, ginger and olive oil.
Stir with a whisk briefly, then continue by adding, one at a time, egg, egg yolk and sugar.
Whip the mixture for 5 minutes to obtain a very soft creamy base.
Add a pinch of salt, baking powder, sifted, whole wheat flour and continue stirring with a wooden spoon.
Knead the last few minutes with your hands until obtaining a compact mass. - Divide the dough into thirty equal pieces and knead forming medallions, then arrange them on a baking sheet covered with parchment paper and bake at 170 ° C for ten minutes.
