INGREDIENTS
- For the biscuits:
- -90g flour
- -30g almond flour
- -4 tablespoons apple juice
- -2 tablespoons rice oil
- -1 tablespoon cane sugar
- -a pinch of baking powder
- For the kiwis:
- -6 kiwis
- -2 oranges
- -250ml almond milk
- -1 teaspoon sugar
- -1 teaspoon honey
- -1 teaspoon corn starch
- -half a lemon
- -cocoa powder
INSTRUCTIONS
- Prepare the almond custard cooking the almond milk, the corn starch, the sugar and a teaspoon of grated orange peel.
- Mix all the ingredients for the biscuits, then roll them up into a 3-4mm layer and with a half moon mold, create 24 biscuits. Bake at 170°C for 10 minutes.
- Wash and dry the kiwis to remove the fuzz, then cut one edge to make it more stable. Cut them in half and remove the pulp with the help of a spoon. Chop the pulp and season it with some honey and lemon juice.
- Fill the kiwi cups with the almond custard and decorate with half a slice of orange, than place 3 cups in every plate and sprinkle some cocoa powder on top. Fill the biscuits with the kiwi pulp and serve 1-2 of them with the kiwi cups.
