Light Grapefruit Jelly with Aniseed

INGREDIENTS
  • - 2 pink grapefruits
  • - 50 g of dark chocolate
  • - 30 g of potato starch
  • - 2 tablespoons brown sugar
  • - 2 Berries star anise
INSTRUCTIONS
  1. Squeeze the grapefruit obtaining at least 400 ml of juice (if not sufficient elongate with a little water) and transfer it in a saucepan with the aniseed.
  2. Dissolve the starch in a small bowl with a few tablespoons of juice until creamy with no lumps, then add this to the remaining juice in saucepan and heat over low heat, stirring constantly, until it forms a jelly cream.
  3. Remove the star anise and pour the mixture into 4 cups, then store the jellies in the refrigerator.
  4. Sprinkle the cups with brown sugar, complete with chocolate reduced in thin flakes and serve immediately.
