INGREDIENTS
- - 200g Peas
- - 200g strawberries
- - 100g Brown sugar
- - ½ vanill beam
- - 15g corn starch
- - 1 lemon
- - Salt
- - 350g fresh cream
- - mint to decorate
INSTRUCTIONS
- Pour the peas into slightly salted boiling water, boil them for 5 minutes, then drain them and rinse them with ice cold water to maintain their vibrant green color. Let then cool down completely and rinse them.
- In a bowl, combine the cream, the sugar, the corn starch and the vanilla seeds and bring to boil, stirring constantly. Continue for 2 minutes, then remove from the stove and let it cool down a little bit.
- Combine the peas to the cream and blend to obtain a smooth cream. If needed, sift it through a colander to remove the peel of the peas. Let it cool down and store in the fridge for at least half an hour.
- Pour the cream in the ice cream maker and push start, following the instruction of the machine, then place the ice cream in the freezer to thicken a little more.
- Slice the strawberries and season them with some sugar and lemon juice. Serve the ice cream with the strawberries, their liquid and a few mint leaves.
