Plum Tarte Tatin with Cinnamon

INGREDIENTS
  • For the dough:
  • - 100 g of wheat flour type 0
  • - 100 g of corn starch
  • - 100 g of butter
  • - 80 g sugar
  • - 2 eggs
  • - 2 teaspoons of baking powder
  • - Salt
  • For the filling:
  • - 500 g of plums
  • - 50 g sugar
  • - 20 g of butter
  • - 1 teaspoon ground cinnamon
INSTRUCTIONS
  1. Cover with paper baking a cake pan with a diameter of 24 cm. Sprinkle with melted butter, cinnamon and sugar.
  2. Halve the plums, remove the stones and distribute them in the mold well aligned with the cut side facing down.
  3. Then prepare the dough in a mixing bowl just melted butter with the sugar and a pinch of salt. Add, little by little, the previously beaten eggs and finally the flour and starch mixed with yeast. Mix thoroughly.
  4. Spread the mixture over the plums and level it carefully. Bake at 180 ° C for about 45 minutes. Let stand 5 to 15 minutes the cake, then carefully turn it upside down on a serving dish. Gently remove the parchment paper and let cool well before serving.
