INGREDIENTS
- -120g ricotta cheese
- -2 eggs
- -40g white flour
- -40g corn starch
- -3 tablespoon agave syrup
- -1 teaspoon grated lemon peel
- -1 teaspoon baking powder
- -1 teaspoon powdered sugar
- -salt
- -butter
INSTRUCTIONS
- Separate the egg whites and the yolks.
- Sift or blend the ricotta to make it creamy. Place it in a bowl and combine it to the lemon peel and the agave. Then, add the yolks and the flour, the corn starch and the baking powder, while whisking the mixture.
- Whip the egg whites and add a pinch of salt in the end. Incorporate them to the batter and transfer it into 4 single serving floured and buttered moulds.
- Bake them at 160°C for 25 minutes. Let them cool down completely, and decorate them with the powdered sugar.
