Ricotta Muffin with Lemon

INGREDIENTS
  • -120g ricotta cheese
  • -2 eggs
  • -40g white flour
  • -40g corn starch
  • -3 tablespoon agave syrup
  • -1 teaspoon grated lemon peel
  • -1 teaspoon baking powder
  • -1 teaspoon powdered sugar
  • -salt
  • -butter
INSTRUCTIONS
  1. Separate the egg whites and the yolks.
  2. Sift or blend the ricotta to make it creamy. Place it in a bowl and combine it to the lemon peel and the agave. Then, add the yolks and the flour, the corn starch and the baking powder, while whisking the mixture.
  3. Whip the egg whites and add a pinch of salt in the end. Incorporate them to the batter and transfer it into 4 single serving floured and buttered moulds.
  4. Bake them at 160°C for 25 minutes. Let them cool down completely, and decorate them with the powdered sugar.
